PALERMO'S FIRST BREWERY
The Ballarak Brewery is the project's production hub and the point where everything began to take shape.
The first batches were brewed in Ballarò, in a direct and unfiltered setting, where the artisanal approach is total and the connection to the local area is immediate. From the very beginning, the brewery has been integrated into the venue: the beer is brewed and served in the same place, with no distance between those who make it and those who drink it. It is here that one of Ballarak’s core principles takes shape: shortening the supply chain, making everything more direct, and maintaining genuine contact with people.
It's not a matter of convenience. It's simply the way Ballarak has chosen to exist.
MAGIONE SQUARE
With the relocation of production to Piazza Magione—which began in 2020 and was consolidated in the following years—the brewery entered a more structured phase without losing its original character. The link between production and service has not weakened; on the contrary, it has become even more central.
Production is led by Eugenio Ricca, Head Brewer, who is responsible for recipe development and technical oversight, alongside Daniele Minore, Brewer, who has gradually advanced through the ranks within the company and has become an increasingly active figure in operational management and production development.
Ballarak craft beers are the result of ongoing research, experimentation, and refinement, with a strong focus on the quality of raw materials and the precision of production processes. The lineup includes interpretations of classic styles, more contemporary brews, and a constant reimagining of styles—all filtered through a personal and distinctive approach.
Ballarak’s signature style is characterized by balanced, straightforward, and approachable beers. These beers are designed to truly deliver, not just to make a splash for five minutes. Every element is in the right place, with the goal of making the drinking experience clear, pleasant, and consistent.
The idea isn't to impress at all costs. It's to make beers with character—beers that pair well with different occasions and become a part of the daily lives of those who choose them.
Today, the brewery is part of the Magione brewpub and continues to follow the same philosophy as when it first began: to bridge the gap between production and consumption and to turn every beer into a direct, shared, and mindful experience.
