BREWPUB IN PALERMO
The Ballarak brewpub in Palermo, located in Piazza Magione, is the project’s hub. It’s the place where production, hospitality, and community truly come together.
It was founded in 2021 following the transformation of the former taproom and carries forward a vision that has remained unchanged since the beginning: to ensure that beer is brewed and served in the same place, without intermediaries, without distance, and without unnecessary filters.
The beers come straight from the brewery, preserving their freshness, integrity, and character. This approach makes the experience more authentic, more immediate—more Ballarak.
Over time, the brewpub has become much more than just a place to have a drink. It’s a space open to events, culture, social gatherings, and moments of connection that make the experience richer and more vibrant.
30 DRAFT BEERS
The 30 draft beers are one of the brewpub’s most recognizable hallmarks: a constantly rotating selection dedicated almost entirely to Ballarak brews, which now number 37 different recipes. It’s not just a wide selection. It’s a dynamic system that allows us to explore different styles, interpretations, and variations while always maintaining consistency.
In addition to beer, Ballarak is expanding its offerings with a carefully curated selection of cocktails and wines, developed according to the same criteria: quality, balance, and character. Each category is managed with care, helping to create a cohesive and distinctive overall experience.
The staff is a central part of the brewpub. It is a well-trained, attentive, and engaged team, capable of guiding customers with expertise but without being overly formal, while maintaining a direct, simple, and natural relationship.
The food menu follows the same philosophy: simple yet distinctive cuisine, designed to complement the beer without overpowering it. From the aperitif—which also features a selection of Venetian cicchetti—to the more substantial dishes, everything is crafted with care, is accessible, and is consistent with the rest of the experience.
